Pizza Base Recipe

This is my pizza base recipe that I got from an Italian friend many years ago. He swears it is an authentic and foolproof recipe.

1 teaspoon dried yeast
21oz (600g) all-purpose (plain) flour
2 teaspoon salt
1 tablespoon olive oil
10fl oz (300ml) water

Mix a couple of teaspoons of flour with 3 tablespoons warm water and stir until combined.

Sprinkle over the yeast and gently stir until dissolved.

Leave for 5-10 minutes for the yeast to activate. Within 5-10 minutes the mixture should start to bubble and foam.

Pour the yeast mixture, flour, salt, water and olive oil into the large bowl of an electric mixer.

Mix with a dough hook until it forms a dough.

Turn onto a floured surface and knead for about 5 minutes.

Brush a clean bowl lightly with olive oil and put dough in the bowl. Cover with a lid or cling wrap.

Leave in a warm place for at least one hour until the dough has doubled in size.

Turn the dough back out onto a floured surface and knead for 2 minutes.

Divide into four portions and roll into balls. Leave portions to rest or an hour.

Roll each portion on a floured work surface to desired thickness.

Cover with sauce and toppings.

Like most of the recipes on this site, this is not a difficult recipe. The actual making doesn't take long but the waiting time means that you need to put aside a couple of hours for the whole process to be completed.

Despite this, the result will definitely be worth the wait.
