Ingredients

  • 2 cans (14-1/2 oz each) diced tomatoes, undrained
  • 2 cans (10-3/4 oz each) condensed tomato soup, undiluted
  • 2-1/2 cups water
  • 1 package (3-1/2 oz) sliced pepperoni, quartered
  • 1 medium sweet red pepper, finely chopped
  • 1 medium green pepper, finely chopped
  • 1 cup sliced black olives (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • French bread (optional)

Directions

In a large pot or Dutch oven, combine the tomatoes, soup and water and bring to a boil.

Reduce heat and simmer for about 15 minutes.

Mash the tomatoes up with a potato masher or the back of a spoon.

Add the pepperoni, red and green peppers, olives and all the spices.

Cover and simmer about 10-12 minutes.

You want the peppers nice and tender.

Ladle into bowls and sprinkle mozzarella cheese on top.

*Another yummy option is to melt mozzarella cheese on a slice of baked French bread and serve the soup with the bread on top of the soup (see picture above). Either way, you can't go wrong!
