BBQ Chicken Pizza Recipe

This BBQ chicken pizza recipe is a healthy pizza to throw on the grill. Enjoy this barbecue chicken pizza.

The beauty of going with a barbecued chicken recipe is that it cooks up fast and delicious.

Believe it or not, grilling pizza is faster and almost easier then ordering it from your local delivery joint, not to mention, cheaper!

Pizza is always delicious when cooked over very hot flames (which is why wood burning ovens make the best pizzas).

In this case, we are going to prepare our chicken ahead of time, slap that dough right on the grill for just a minute or two and you have yourself dinner.

Ingredients

  • 1/2 pound chicken tenders
  • 1 Jar of BBQ sauce (I like KC Masterpiece)
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 medium red onion, sliced thinly
  • cilantro, chopped (optional)
  • 1 package refrigerated pizza dough or prepare your favorite pizza dough recipes

Directions


Heat olive oil in a skillet over medium-high. Add chicken tenders to skillet and cook until browned, roughly 11-12 minutes. Let chicken cool.

Get your pizza dough recipe or refrigerated dough ready by rolling it out on a floured surface into a circle or square. (I actually used this Chicago deep dish pizza recipe in these pictures. I had it left over from another batch, so it had been in the fridge for 2 days. I let it sit and get to room temperature, and then rolled it out thin. It worked great on the grill.)

When the chicken is cool enough to handle, dice it up and toss with BBQ sauce until evenly coated. Be sure to leave enough BBQ sauce to spread over your dough (but don't do that just yet).

Slice up some red onion.


Place your prepared dough on a pizza peel or plate and brush with olive oil on one side.

Be sure to have your chicken and other toppings ready to go near your grill so you can place it on your pizza quickly. The crust cooks fast so you don't want to be preparing toppings while your dough is on the grill!

Place dough (oiled side down) on hot grill for about 1 to 1-1/2 minutes until it starts turning golden brown. Brush olive oil on top side. Flip dough and let cook for just a minute or so.

It can be tough to get the raw, flimsy dough onto the grill. Use either a pizza peel, sprinkled with cornmeal, or even a plate to flip the dough onto the grill. (I used a paper plate and turned it upside down to drop the dough onto the grill.)


Love those grill marks!

Quickly spread BBQ sauce/chicken mixture, onions and cheese on pizza crust.

Close lid on grill and let pizza cook about 1-2 minutes until the cheese is melted and chicken is warm.

Slice and serve. Grilling the crust makes it chewy on the inside and crunchy on the bottom.
