Chicken Garlic Pizza Recipe

Delicious, garlicky and simple.

Ingredients

  • 1 chicken breast (I like to roast it with skin on and bone in, but you can use boneless too)
  • 2 tablespoons butter or margarine, softened
  • 2 cloves garlic, minced
  • 2 tablespoons chopped green onion
  • 1/2 teaspoon dried basil
  • 1 refrigerated pizza crust dough or you can follow one of our pizza dough recipes
  • 2 roma or plum tomatoes, diced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Directions

Place chicken breast on a cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in oven at 350 degrees for about 35 minutes or until cooked through.

Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into bowl and refrigerate until set.

Remove roasted chicken from oven when done. Leave the oven at 350 degrees.

When the chicken has cooled enough to handle, remove skin and cut meat off bone into slices or chunks.

Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using a pastry brush. Arrange cooked chicken on top, and then sprinkle with mozzarella cheese. Top with tomato slices, cilantro and Parmesan cheese.

Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.
