Hash Brown Potato Pizza

Ingredients

  • 4-6 medium Russet potatoes, washed (unpeeled)
  • 1 cup shredded mozzarella cheese
  • 1 cup cubed ham
  • 1 cup sliced olives
  • 2 tbsp olive oil
  • salt & pepper

Directions

Wash potatoes then cut into thirds, leave skin on.

Cook covered in microwave oven for about 6 minutes on high. Potatoes should be only partially cooked. They should be hard and crunchy when stuck with a fork.

Shred potatoes on a grater.

Pre-heat olive oil in large frying pan on medium to medium-high heat.

Place potatoes in an even flat layer in the pan (the potatoes are going to be the crust of this pizza so try and keep them in a single layer in the pan).


Cook uncovered until evenly golden brown on the bottom, about 12 to 14 minutes.

Carefully flip the potatoes - the goal being to keep it as one piece!

After cooking uncovered for apx. 10 minutes and place cheese, olives and ham on top of the potato pizza.

Reduce heat to medium and cook covered until cheese is melted and bottom of potatoes is golden brown. Salt and pepper to taste.

Slice into wedges and enjoy!
