Pizza Dough

This is the best pizza dough and the recipe I use all the time. Because it is so good and my family love it we seem to have pizza about once a week.

Different toppings mean that even though we have pizza often, every pizza is different. Sometimes I use vegetarian toppings or chicken, lamb, beef or whatever leftovers I have in the refrigerator.

1 tablespoon dry yeast
1 teaspoon superfine (caster) sugar
1 cup (250ml) warm water
2-1/2 cups ( 375g) plain or 00 flour
1 teaspoon salt
1 tablespoon olive oil

Put the yeast, sugar and water in a bowl and stir gently to combine ingredients.

Put in a warm place for 5-10 minutes until bubbles appear on the surface.

In a separate bowl, mix the flour, salt and olive oil. Make a well in the center and pour in the yeast mixture.

Mix together until mixture forms a dough. It will be sticky but not runny.

Turn dough onto a floured work surface and knead for approx 5 minutes until it feels smooth and elastic..

Lightly brush a clean bowl with a little olive oil and put the dough in the bowl. Cover with a damp cloth.

Place in a warm place until the dough has doubled in size (at least 30 minutes).

When dough has doubled, knead again on a floured surface and cut into three sections and roll each section into rounds.

It is now ready for pizza sauce and toppings.

* The temperature does make a big difference to how quickly the dough rises. It doubles in size much quicker on a sunny summer day than it does on a cold winter day.

I agree that finding the perfect recipe makes the decision to have pizza so much easier. It is great to have an easy recipe to turn to and know you can always rely on it.

My family love pizza and like you we have them often. The kids were saying only the other day that they can't remember when we last had a store-bought pizza!!
