Spinach Pizza

Our spinach pizza recipe is an easy, healthy meal. This veggie pizza makes a great treat for anyone that likes spinach.

This healthy vegetable pizza recipe works great with fresh spinach or frozen spinach.

You can also add tomatoes, red pepper flakes and anything else that you fancy.


Ingredients

  • 1-12 inch prepared pizza crust (Boboli, Pillsbury or your own creation)
  • 1 large garlic clove, finely chopped
  • 2 tablespoons olive oil
  • 1 bag fresh spinach, steamed, or 1 box (10 ounces) frozen spinach, thawed and well drained
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • all-purpose flour
  • 1 cup mozzarella cheese, shredded or thinly sliced
  • 2 tablespoons grated Parmesan cheese

Directions

Preheat the oven to 500° F. In a medium skillet over low heat, cook the garlic in the oil for 1 minute. Stir in the spinach, salt and pepper.

Cover and cook the mixture for 2 minutes. Let cool slightly.

Stretch the dough into a floured 12-inch pizza pan (or if using Boboli, place on baking sheet).

Spread the spinach over the dough, leaving a 1-inch border. Top with mozzarella and then sprinkle with Parmesan cheese.

Bake this pizza for 10 to 12 minutes or until the edges are puffed and the crust is crisp and browned. Transfer to a cutting board.

Cut into wedges and serve.
