Zucchini Pizza
A Healthy Vegetable Pizza

This zucchini pizza recipe is a delicious, healthy meal.

It's great if you're looking for a light alternative to a heavier pizza topping.

Zucchini is such a versatile vegetable, it was bound to find its way onto a pizza crust sooner or later!

The flavors are subtle, yet combine beautifully into a gourmet pizza treat.


Ingredients

  • 1 large garlic clove
  • 2 tablespoons olive oil
  • 1 refrigerated pizza dough (or homemade)
  • 1 lb zucchini (about 2 large), cut diagonally into 1/3-inch-thick slices
  • 1/4 teaspoon salt
  • 2 1/2 cups shredded mozzarella (2 1/2 cups)
  • 2 tablespoons chopped fresh oregano

Directions

Mince garlic with a knife then mash (or use garlic press) with a pinch of salt. Transfer to a bowl and stir in 1 teaspoon of olive oil.

Prepare your dough by shaping it into a circle or rectangle. You can also use a Boboli type crust for simplicity. Place on cookie sheet or baking stone and rub with olive oil.

Toss sliced zucchini with a pinch of salt and 1 tablespoon olive oil in a bowl. Lightly grill zucchini on a gas grill or indoor grill pan. Turn occasionally, until tender, roughly 5 minutes.

Bring dough, garlic oil and cheese to grill and place dough, oiled side down, on grill until it turns golden brown, about 2-3 minutes.

Flip crust and brush with garlic oil. Sprinkle with cheese, then zucchini, overlapping the slices a bit. Sprinkle another layer of cheese on zucchini. Cover grill and cook pizza about 4 minutes.

Take pizza off grill and sprinkle with oregano and olive oil.
