Goat Cheese Pizza

This goat cheese pizza with carmelized onions is delicious and low fat. Enjoy this awesome healthy homemade pizza.

A cheese pizza with carmelized onions is a great way to spice up a basic cheese pizza.

This recipe was inspired by a recipe in Cooking Light magazine (modified a bit thought). It's low fat, depending on the sauce you use, and is quite flavorful.


The Cooking Light version uses sun-dried tomatoes, which would be a great topping if you like those. I don't really, so I used Roma tomatoes instead. You can leave out the extra tomatoes all together and it's still a great pizza.

Ingredients

  • 2 teaspoons olive oil
  • 2 cups thinly sliced red onion (1 onion)
  • 1 (1-pound) Italian cheese-flavored pizza crust (such as Boboli)
  • 1/2 cup pizza sauce recipe (or grab a jar of pizza sauce)
  • 1/4 cup chopped roma tomatoes (optional)
  • 2/3 cup (3 ounces) crumbled goat cheese
  • 1/4 cup chopped fresh basil

Directions

Heat olive oil in a large skillet and cook the rings of thinly sliced onion over medium-high heat. Cover for a 3-4 minutes. Uncover and continue to cook them for about 10 more minutes or until golden brown, stirring often.

Place the pizza crust on a baking sheet or stone. Combine the sauce and tomatoes. Spread sauce mixture over pizza crust. Top with the cooked onions and crumbled goat cheese. Bake at 450° for 10 minutes or until crust is golden brown. Sprinkle with basil.
